The Giacomo Simone Winery is located in Campania in the heart of Sannio, at the foot of the Matese and Taburno Regional Parks, it is located in a soft landscape covered by vineyards and olive groves and crossed by volcanic tufaceous ridges and small streams.
The company covers about 10 hectares, including 6 planted with vineyards and 2 with olive groves. The main vines are Camaiola, Falanghina del Sannio, Aglianico, Sangiovese, together with Grieco,
Cerreto, Agostinella, other native vines that the Simone family intends to recover, bringing all production in conversion to organic farming since 2016.
In the vineyard, the goal is to avoid the use of copper and sulfur as much as possible, for this reason we use and experiment with various herbal products and other natural extracts to improve the immune defense of plants as well as continuous and constant monitoring of the vineyards.
I use a tractor, a mulcher to manage the grassing and a low volume sprayer for treatments (which allows me to use very little water per hectare).
The grapes are harvested by hand in the early hours of the day and immediately processed in the cellar.
In the cellar, the vinification by gravity, obtained thanks to the cascade distribution of the production environments, makes it possible to limit, or even avoid, the use of pumps for moving the must and the grapes in the initial stages of vinification.
The fermentation takes place without the use of yeasts, enzymes, additives to speed up or "improve" the natural process, a minimum of SO2 is added to have a total in the bottle not exceeding 40mg/lt, or in some red wines they are not added in any stage of winemaking.
For the whites we prefer to do a few days of maceration based on the vintage and the conditions of the grapes.
Steel tanks are mostly used, only in exceptional cases conditioned during fermentation.
The company has been certified organic since 2019, the wines have been certified since the 2021 vintage.
Certification is only a starting point, it is certainly not an arrival point.
