Domaine des Fables, created in 2019, is located on the slopes of Chautagne (Savoie), near the Rhône and Lac du Bourget. On sandstone molasse and limestone scree soils, the vines benefit from a south-west exposure and a climate tempered by the lake and the river. In this setting, plots of vines rub shoulders with woods, streams and meadows. I cultivate the vines there with respect for the living, so that they offer grapes that tell their story and that of the vintage. The entire estate was engaged in organic farming in 2020 and I am gradually applying biodynamic practices as well as agroforestry. My goal is to create a balanced ecosystem around the vine with maximum biodiversity.

This work continues in the cellar, all fermentations are spontaneous, the vattings adapted to the harvest with little intervention, the aging guided by the stars and the evolution of the wines. Domaine des Fables wines are without inputs with the exception of a few grams of sulfur to accompany the wine in the bottle (around 1gr/L S02). The wines are generally bottled without filtration.

In 2018, after several years of searching for vineyard plots and without concrete leads, I created MAUDIT FLACON, a trading structure allowing me to start producing wines. Maudit Flacon vinifies beautiful grapes produced in Organic Agriculture (some in conversion) and Biodynamic. The grapes are produced by winegrowers who, like me, believe that wine is made in the vineyard. We share the vision of viticulture that respects living things. In this way, I have the assurance that these grapes will allow me gentle vinification. Maudit Flacon vinifies grapes from Languedoc, Auvergne, Pays de Gex and perhaps others... The grapes are transported in openwork boxes to the cellar. Here, no harvest pump, we respect the fruit. The whites are barely settled and the reds are never crushed. I only intervene when necessary. All wines are aged in barrels for at least 9 months. They are then bottled with very light sulphiting, unfined and unfiltered.
