The Tarazona Miriam farm, located on the slopes of the Casentino (380 m) is family-run, so all the procedures are meticulously controlled, even given the small quantities produced. Our products are the result of studies, experiments, even mistakes, which sometimes help. We are curious to transform, perhaps with old recipes, all the products that nature offers us on the farm and in the surrounding woods. Having made a choice, at the beginning of the activity, of absolute respect for nature and above all an absolute prohibition of any chemical product for our vegetation and products, the first step was to go organic. We have been working with green manure and stable manure for 12 years and we have come very close to the PERMACULTURE of the Japanese Prof. Fukuoka, very important for understanding the needs and knowing how to seize the right moment for any crop or plant, without wasting or wasting time. We do not use mechanical means and all processes, including harvesting, are manual. Our pride is the Etruscan Vinification: 22 years of research, studies and tests with Archaeologists, Geologists and Doctors in Agriculture, with a unique and excellent result. Once the fermentation is over, the nectar of the gods is buried at a depth of 3 meters for 1, 2 or 5 years without any additions. In 2019 we won the 1st prize of La Fabbrica Nel Paesaggio (sponsored by Unesco and the European Community) receiving 2 criteria out of three to become a World Heritage Site, the first for having brought back to life a winemaking system that has been extinct for 2600 years, the second for respect for nature. The third missing criterion is sharing: this is why in 2021, together with the archaeologist Riccardo Chessa, I opened the Vinum Temetum association to spread the "Mondini Method" (TV copyright in 2015) with a disciplinary so that a plurality of winemakers Etruscans can obtain the aspired title. In 2020, the CCIAA of Arezzo and Siena awarded the company for the woman in the field project and for the uniqueness of the products.
