The Domaine du Phénix vineyard is Mediterranean; located on a plateau between the Fontfroide massif and the Bages ponds. The winds play an important influence there: the Cers (tramontane), the dominant dry wind coming from the north-west and the Marin, a very humid wind which brings salinity to the ground. These winds are conducive to growing vines by limiting fungal diseases and promoting healthy crops for organic cultivation. Dry and very hot summers (zero rainfall from May to September). Mild and rainy winters from November to April characterize this strip of the Corbières Maritimes coastline. The soils are predominantly clay-limestone and are distributed very heterogeneously. White soils where limestone dominates and red earths colored by iron oxides enhance the specific character of the different grape varieties and thus contribute to the production of atypical wines. Our attention is focused on the invisible and the living. We draw on all knowledge and discoveries to take care of the ecosystem and biodiversity. The use of biodynamics and permaculture allows us to bring consistency to the entire vineyard in its environment made up of olive trees, scrubland and Aleppo pine forests. Since 2017, all our wines have been vinified using indigenous yeasts, without added sulphites, not fined or filtered. Keeping the essence of the elements contained in the wine for the health of the soul and the heart remains our priority. The grapes are picked by hand. Some of the vines are 100 years old and small yields allow us to maintain a high concentration of aromas and a beautiful complexity.
