We are in Montepetrolo, south of Lake Trasimeno and about twenty km from Perugia. The Tiberi farm was founded in the early 1900s and still today involves three generations, Cesare Tiberi, his son Piero and his nephew Federico. There are only 3 ha located on hills of 350 m asl, with 50-year-old vines (and in the case of the Granella grape, also called Pecorina, a plant of 150 years ago) and soils rich in skeleton. Four generations have alternated in the processing of the vineyards. Today, those methods of managing and processing the grapes in the cellar have remained unchanged as they were then. This has allowed us to pass on not only a respect for the land, but above all the varieties that that land have helped to enhance: Gamay del Perugino, Canaiolo, Grechetto, San Colombana, Moscato, Malvasia, Trebbiano, Ciliegiolo and Pecorina grapes. The gestures of the past remain in the cellar. Spontaneous fermentations, macerations on the skins to pass all the identity of a vintage and a territory to the must, management of the pomace cap with daily breaking, light pressing with a manual press and decanting following the lunar phases. While the world of wine has accelerated, here the rhythms and the sense of gestures have remained the same. Tiberi is a member of VinNatur.

Siamo a Montepetrolo, a sud del Lago Trasimeno e a una ventina di km da Perugia. L'azienda agricola Tiberi nasce agli inizi del '900 e ancora oggi vede coinvolte tre generazioni, Cesare Tiberi, il figlio Piero ed il nipote Federico. Sono solo 3 ha posti su colline di 350 m slm, con vigne di 50 anni (e nel caso dell'uva Granella, anche detta Pecorina, un impianto di 150 anni fa) e suoli ricchi di scheletro. Quattro generazioni si sono alternate nella lavorazione delle vigne. Oggi, quei metodi di gestione e di lavorazione delle uve in cantina, sono rimasti invariati come allora. Questo ha permesso di tramandare non solo un rispetto della terra, ma soprattutto le varietà che quella terra hanno concorso a valorizzare: Gamay del Perugino, Canaiolo, Grechetto, San Colombana, Moscato, Malvasia, Trebbiano, Ciliegiolo e l'uva Pecorina. In cantina sono rimasti i gesti di una volta. Fermentazioni spontanee, macerazioni sulle bucce per passare al mosto tutto l'identità di un'annata ed un territorio, gestione del cappello di vinacce con rottura quotidiana, leggere pigiature con un torchio manuale e travasi seguendo le fasi lunari. Mentre il mondo del vino ha accelerato, qui i ritmi ed il senso dei gesti è rimasto lo stesso.
