I settled in 2018 just after my BTS viti Oeno in Montmorot. Passionate about natural wine in Paris, I melted for Bugey these whites, their acidities. Between Jura and Savoie I am spoiled by the outpouring of grape varieties. Mondeuse Gamay for the reds and Jacquère Altesse Aligoté Chardonnay make up the share of the whites in my cellar. Today I cultivate 4ha of vines which I complete by buying grapes from organic farming in Savoie. The plots are divided between Bassin Belleysan, Corbonod, Ambléon. I use Bordeaux mixture and sulfur to protect my vines mainly from powdery mildew and mildew. Zero sulfites in the cellar. Zero sulphite at bottling. This is my bias. Healthy grapes harvested by hand and repatriated in 15kg fruit boxes. Pressing with a wooden ratchet press operated by hand, hand crusher, settling, racking are the only actions in the cellar. The fermentations are spontaneous and supported by light pumping over at the seal.

Entre Jura et Savoie je suis gâtée par l’effusion de cépages. Mondeuse Gamay pour les rouges et Jacquère Altesse Aligoté Chardonnay font la part des blancs dans ma cave. Je cultive aujourd’hui 4ha de vigne que je complète par de l’achat de raisin en agriculture biologique en Savoie. Les parcelles sont morcelées entre le Bassin Belleysan, Corbonod, Ambléon. J’utilise de la bouillie bordelaise et du soufre pour protéger mes vignes de l’oïdium et du mildiou principalement. Zéro sulfite à la cave. Zéro sulfite à la mise en bouteille. C’est mon parti pris. Des raisins sains vendangés à la main et rapatriés en caissettes à fruit de 15kg. Pressurage au pressoir en bois à cliquet actionné à la main, fouloir à main, débourbages, soutirages sont les seules actions en cave. Les fermentations sont spontanées et soutenues par de légers remontages au sceau.
