The Mas Lasta vineyard is located in Saint Privat on the foothills of the Larzac plateau at an altitude of 400-500m. I created the estate in 2016 when the vines were intended for grubbing up. I cultivate 9ha of plots of old vines (some are hundred years old) in terraces and in dry stone clapas from food crops from the last century. These are Grenache, Syrah, Cinsault and Carignan crafted in an organic and biodynamic way with the use of herbal teas (valerian, horsetail and wicker) that I make myself. Tillage is carried out using animal traction for the most ancestral plots or using a chase. The objective is to work as naturally as possible to preserve the biodiversity specific to this semi-mountain / semi-Mediterranean area. These are the last vines before the great Causse Larzac, hence the name "Lasta" which means last in Esperanto. The harvest is manual.
