PODERE CERVAROLA THE COMPANY The Podere Cervarola farm was founded in 2015 thanks to the acquisition of 9 ha of land in the Villabianca area, on the Modena hills, about 300 meters above sea level. On the farm there was already a ten-year-old Lambrusco grasparossa vineyard (about 0.9 ha). The Lambrusco vineyards are exposed to the North-West, the Trebbiano Modenese to the South-East, both have a position characterized by a slope of about 30%. Within the vineyards there are now abandoned varieties of local vines such as Trebbianina (Trebbiano di Spagna), cat's eye, Tuscan grapes…. to safeguard biodiversity and to enhance local traditions. In the remaining area the project is to grow small fruits, ancient grains and vegetables. METHOD OF CULTIVATION In the field we work following the principles of organic and biodynamic agriculture. For the phytosanitary treatments we only use copper and mine sulfur, to which we associate natural invigorating agents such as nettle macerate, Ampelomyces Quisqualis and Trichoderma. The vineyards up to the third year do not undergo any phytosanitary treatment. Field interventions such as pruning, suckering, possible topping, harvest…. they are all done manually .. The harvest is manual in crates. VINIFICATION In the cellar we do not use any additives except potassium metabisulphite (in the amount of 5g / hl) only in pressing. Fermentation takes place thanks to indigenous yeasts in concrete tanks without any temperature control. The wine does not undergo any filtration or clarification. For the refermentation in the bottle, if all the sugars have been carried out, a quantity of must is kept aside during the pressing phase which is then immediately frozen without being filtered or sulphited.
