Location: Kamptal, Austria Concept: organic, biodynamic (respekt-BIODYN), minimal SO2 addition, classic methode (Bio-Sekt) Grapes: Zweigelt, Pinot Noir, St.Laurent Aromas: yeasty notes, plum cake, puff pastry with cherries, white nougat, hazelnut cake Palate: discreet fruitiness, fine mousse, mouthfilling texture, wonderfully soft acidity (So close to a champagne!) Other information: selective harvest by hand, whole cluster pressing, spontaneous fermentation in stainless steel tanks, aging in stainless steel tanks on full lees for 4 months, after racking another 4 months on fine lees in stainless steel tanks and in wooden barrels, aging on lees at least 20 months, dosage 4 g/l, serve at 6-8°
