In this modern era, Stéphane and Régine Bannwarth were one of the first French domaines to bring in qvevris, back in 2011.
The pioneers of Obermorschwihr in Alsace. Georgian jars, beeswax coated clay pots, buried underground for temperature control. The grapes can sit in a hemp bag for several months, then removed for the wine to continue its journey into complex aromas and delicious flavor.
