FYSIKA FYSIKA is back on Sunday, November 3rd, and will transform the Athens Conservatoire into a colorful wine celebration!
From Thrace to Crete and from Ikaria to the Peloponnese, wineries from across the country will bring their wines to the historic venue of the Conservatoire, where the range and dynamism of Greek natural wine will be showcased.
Organic, biodynamic, with minimal sulfites, indigenous yeasts, unfiltered and unfined wines will fill your glasses and tell their unique stories. Alongside the Greek producers, this year FYSIKA is hosting 6 wineries from Italy, Serbia, and Georgia, countries with long traditions in natural winemaking.

In just one day, you will taste over 200 low-intervention wines and meet their creators. Their wines are pure, environmentally friendly, and above all, delicious!
Joining us at the Athens Conservatoire will be To Tromero Paidi with natural sourdough breads, Ta Karamanlidika tou Fani with fine cheeses, and for dessert, Maraboo will be offering wine-flavored ice cream.
On November 3rd, we will once again celebrate independent producers, their work, their respect for nature, and most importantly, their character-filled wines that represent their personalities and the diverse terroirs from which they come.
Sustainability
We love wines that come from organic or biodynamic vineyards because they connect modern winemaking with harmony in nature. Natural wines are cultivated in a clean environment, without additives, synthetic fertilizers, or pesticides, allowing the plants and the land to thrive. Their winemaking is done with minimal or no sulfites, without fining agents or commercial yeasts.
The exhibition equipment is specially designed for reuse and made from environmentally friendly materials, avoiding single-use plastics. In 2023, 2.000 glass bottles were recycled, and 2.120 cigarette butts and 1.400 cork pieces were composted.
